As a founding investor and Vice President at Unreal Deli, Rosanna helped commercialize and bring to market, with a notable sale to Whole Foods, the company’s original concept meat, NY deli style Corn’d Beef which opened the doors to a deal with Mark Cuban on Shark Tank. She spearheaded end-to-end new development initiatives during a phase of rapid expansion, including Unreal Roasted Turk'y and Steak Slices, currently featured on the menu board of over 1000 deli’s in the US. Her latest work, brings to market Unreal Bacon. This groundbreaking product not only marks a significant advancement of RTE plant-based alternatives, but also incorporates a unique fat technology that authentically emulates the qualities of animal-based bacon. Prior, Rosanna's leadership journey as President of Rabbit Hole Foods, played a pivotal role in spearheading plant-based dips and spreads on retail shelves where classics like tuna salad and egg salad were reimagined using hearty pulses and remain a ready to eat staple in natural food chains in the southern California region including Whole Foods. Her visionary prowess came to the fore with the establishment of The Rabbit Hole Cafe, a pioneering plant based culinary destination in Los Angeles's Conejo area. As early as 2012, Rosanna standardized vegan menus at the cafe, setting a trailblazing precedent for many more plant based menus in the city. Rosanna honed her ability to entice the gustatory senses of retail consumers as a consultant in formula development for private label brands in national market chains such as Trader Joes and Target and served as a private celebrity chef. Prior to her own entrepreneurial endeavors on the west, Rosanna gained mastery of the grocery business in her family's natural food markets on the east, where her various roles over 10 years included operations management, business development, purchasing, product development and customer service.
